Ok, I’ll admit, this recipe, which is adapted from Rawmazing, seems as though it will take forever, but really, since there is no cooking required, it’s actually really easy….you will just have to wash out your blender a few times and make the “cream” in advance to give it time to set up.
And, when you serve it to your guests, they will think that you have slaved away for hours…and you’ll just smile because you know the truth.

Pecans–Rich in age defying antioxidants and high in healthy unsaturated fat pecans are a great nut to have in your daily diet.
Pumpkin Cranberry Ginger Parfait
2 cups pumpkin puree
1 teaspoon cinnamon
4 teaspoons coconut nectar
Place the pumpkin puree, cinnamon and coconut nectar in a food processor or high speed blender. Scrape down the sides a few times while processing. Set mixture aside.
Ginger Whipped “Cream” Layer
½ cup raw cashews, soaked overnight and rinsed
3 tablespoons water (more if needed)
2 tablespoons fresh ginger, grated
¼ cup coconut oil (melted)
2 tablespoons coconut nectar
Place cashews and water in a high-speed blender. Blend until smooth (you may need to adjust the amount of water).
Add melted coconut oil, fresh ginger and coconut nectar. Process until well blended.
Transfer to a container and chill until set.
1 cup frozen cranberries, thawed
¼ cup coconut nectar
Place cranberries and coconut nectar in a food processor and process until almost pureed (it’s better when there are bits of cranberry).
1 cup pecans
1 teaspoon cinnamon
Place pecans and cinnamon in food processor. Pulse until chopped.
In a parfait glass, place a layer of pecans, topped with a layer of pumpkin puree, a layer of cranberries, then a layer of the ginger whipped “cream”. Repeat layering & top with pecan
